June Cheesecake of The Month!!!

Chocolate Chip Coffee Cheesecake


(oh yes two of my favorite things in the world chocolate & coffee)

2 (8oz) packages of cream cheese, softened

1/2 c. sugar

2 eggs

1 instant coffee packet

1 (6 oz) oreo cookie pie crust

1/2 cup semisweet chocolate chips

  1. Dissolve instant coffee in 1/3 c. hot water, place in fridge or freezer and cool to room temperature.

  2. Preheat oven to 350 degrees. Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add eggs on at a time and coffee; mix until blended

  3. Spread 1/4 cup chocolate chips into bottom of pie crust.

  4. Pour cream cheese mixture over chocolate chips.

  5. Melt remaining 1/4 c. chocolate chips in microwave-safe bowl until melted. Pour into cheesecake mixture and swirl with end of a knife until a 'marble' effect appears.

  6. Bake 35-40 minutes or until center is almost set. Cool completely on wire rack. Refrigerate at least 3 hours but best if it can chill over night. :)

  1. OMG, I want it now. Now I need to go out and get coffee. I am in the market for a Kuering coffee maker, so I donated my coffee maker to Goodwill before we moved, so now I am "forced" to go out on the mornings I really want a cup!

  3. OK, I'm hungry now - I need some to go with my coffee! LOL!! YUMMY! I'm definitely going to have to try this - my hubby doesn't particularly care for cheesecake, but this might just change his mind since he loves chocolate and coffee...and chocolate coffee! ;)
